Wondering what the Irish eat for St. Patrick's Day? My favorite recipes are for Irish Soda Bread, Bailey's Irish Cream Cheesecake and Corned Beef and Cabbage. But anyone that wants to be Irish for the day is either buying corned beef brisket, making it, ordering it, and eventually eating corned beef and cabbage on March 17th!
The grocery stores usually have corned beef brisket on sale around St Patrick's Day, and along with potatoes, cabbage, onions and carrots, it makes a real cheap meal. I use the pressure cooker for my corned beef and cabbage dinner because it's quick and easy. But you can also bake it, slow cook it in a crock pot, or slow roast it.
St. Patrick's Day isn't all about corned beef and cabbage though. There's a whole list of yummy Irish recipes that go along with the entree! There are several types of corkscrews. One very simple, but no so easy to use, is the one with T form or helix. This model requires a lot of strength to pull out the cork and the process of introducing the spiral into the cork can cause you some trouble.

I have not had a home cooked meal in some time. You always make wonderful looking meals and my wife loves your recipies. I hope we can find the time to cook at home after we get finished with this job. Keep the recipies coming and some day I will get a chance to enjoy them.
