What's so great about my IRISH SODA BREAD?
Well for starters, it's the taste. It's unlike any other bread you've tried, especially if you add the optional caraway seeds. Then, there's the crumb - so splendidly soft and firm and slightly crumbly all at the same time! It's easy to make because it's essentially a quick bread without yeast, which means, it's QUICK! Last, but certainly not least, you can use it for Irish French Toast! Yes, I've done it on a number of occasions, and it's absolutely wonderful and totally different than regular old French Toast made with store bought bread!
Irish Soda Bread Recipe
Growing up in a state like Rhode Island gave us plenty of opportunities to enjoy the holiday known as St. Patrick's Day. The Irish food here is incredible, as is Italian, Portuguese, French and Greek. Heck, ALL the food here is great! Especially Irish Soda Bread!
I know you've heard me say this for what seems like forever, but I really have been making this recipe for years! And surely you must be thinking that I have to be older than dirt with all these stories. You're probably saying to yourselves, "How old is this woman anyhow?" Well, you can wonder all you want, cause I'm not telling! Let's just say, "I started baking real young!"
I AM IRISH!
But seriously, after trying so many Irish Soda Breads over the years, I finally came up with one that I could put my name on. And yes, I am Irish! I also have some of that green blood running through my veins!
