Tuesdays With Dorie
Is it just me or did I lose a day? For some reason I thought today was Monday, all day! I was procrastinating whether to make my Tuesdays With Dorie cookies today or tomorrow, and then I realized it was tomorrow...today! YIKES! I didn't even have the ingredients for the Chunky Peanut Butter and Oatmeal Chocolate Chipsters! By the time I ran to the store, got what I needed, got side-tracked, made cookie dough, then noticed I have to chill this dough...say what?
I made dinner while the dough was in the cooler. Pulled the dough out, slapped it on my one-and-only cookie sheet, and forgot to take pictures of the process. Oh, what does it really matter? You all know what cookie dough looks like. Why go through 12 photos of ingredients in little bowls and me licking my fingers? So, here I am at midnight on Tuesday, pecking at the keyboard, cropping photos and contemplating one more of those delicious cookies!

Chunky Peanut Butter and Oatmeal Chocolate Chipsters
These are real good cookies even though they're loaded with butter...again! The recipe was chosen by Stefany of Proceed with Caution. You can find Dorie's recipe in her book, Baking: From My Home To Yours on page 73. I just checked Stefany's blog and she also has the recipe posted for you.
Changes & Variations
Most of the 250 plus members of TWD change or modify the recipes in some way, shape or form. It's what bakers do. It's their function! For instance, Stefany made ice cream sandwiches out of hers! Me? I couldn't do the ice cream for obvious reasons. I don't have a freezer. But it didn't stop me from drooling over them!
I decided to halve the recipe when I saw it made 60 cookies. As with almost all Dorie's recipes, those must have been small cookies. I got 18 good size cookies out of half a batch. Regular sized cookies. The kind Grandma used to make. Dorie's must have been bite-size, the size you make for your kids friends, not your husband!
I used creamy peanut butter and threw in not just chocolate chunks, but Reeses's PB chips and honey roasted peanuts too! The dough was very easy to make, and I only chilled it for 20 minutes. The time in the oven took a few extra minutes, but that's because they were bigger cookies.

I had them cooling on the rack in the cockpit when John walked up the dock. He said,"Ooooh, more cookies? I like cookies! Wait, do you still have to take pictures?" He then downed one in two gulps! Gone, just like that! I'm dainty. I savor mine. I nibble at it a little at a time until it's gone. But not him! He wanted another, but I made him wait until after supper. That's when the tall glass of milk came out! Now we're down to 12!

At least there's someone other than YOU to eat all the cookies! My husband isn't crazy about peanut butter or chocolate in cookies (!) so I'm "stuck" eating them myself. Your cookies look gorgeous!

My husband can eat a half dozen cookies in one sitting. I swear he doesn't even taste them as they are gone so quickly. These look like they would be dangerous sitting on my counter.

Your cookies look so delicious. I made the full recipe and they're almost all gone! They would have been gone more quickly had I been able to eat them.

Ooh, the peanut butter chips would definitely kick up that peanut butter flavor. It's a little subtle.

My second half-batch lasted longer than the first one, but still not very long. I like the pictures of the peanut butter chips and chocolate chunks. =)
